what's the thickness of this wheel relative to the OE, and/or the more modern BMW wheels? it doesn't come with trims does it?

It doesn't come with the trim. Total thickness is 1.59 in and uses specific steering wheel Alcantara upholstery material. I personally can't tell much of a difference with OEM.

I am selling as I wanted to offer a true OE CSL / CS replica wheel with the grey alcantara and a rewrap that removes the leather. Different price range though.

I was under the impression that tainik's wheels aren't re-wrapped are you sure?

He wraps over leather - he does it very well from having had 2x of his wheels.

We worked on a new style for which he takes off the old leather, and use the recently released Grey variant of Alcantara's steering wheel fabric.

I wasn't aware there was steering wheel specific alcantara, is it supposed to be more durable?

I'm actually looking for a thicker wheel. I also have a F30 M sport 340 as my daily, and I have to admit I like that wheel better than the one in the M3.

Supposedly, yes! Alcantara has a lot of options in its catalogue. Some examples from the documentation on creating the Custom Seat Program with Recaro CS and Pole Positions.
