I was quoted $700-800 in labor alone to replace rear camber arms, and install new (spherical) RTABs in both locations. Does this seem reasonable? I have never had to do these services before.

That's too much. It's not super easy because you have to at least move the diff around, if not remove, but it still should only take like 2 hours or $240 at typical $120/h. Maybe $500 tops for it and RTABs? Spherical RTABs are easier than factory, no need to clock them (preload).
Camber arms' inner bushings, if like my eibachs (SPC) or turner/ecs with rubber bushings, need to be preloaded, but not spherical.DD: /// 2011.5 Jerez/bamboo E90 M3 · DCT · Slicktop · Instagram
