I just ran a quick mental quote and its probably around $5500-6k.
The vanos job is 100% overlap in labor as a HG, so take that add more labor, more parts ($$$) and machine work.

Why are the pulling off the intake? And intake manifold gaskets make me think they are pulling the TBs? Is this the price for a head gasket (although that would likely be low for a HG)?

Problem is the location. In SoCal there are dozens of qualified shops where you can have these jobs done for like $2-$3k each depending on specifics. It's a few day's drive to save a few thousand bucks.

A new VANOS from Dr Vanos is $1500, new exhaust hub is $700 - does it require buying everything Dr Vanos sells to bulletproof the system??
I agree with George - I'd ask for a breakdown of the parts and labor.

Is there a forum member near WY who has done a few VANOS overhauls?

Here's what they had to say:
"With vanos, associated parts, valve cover gasket, intake manifold gaskets, valve shims, random small pcv hoses and things if they are crumbling and shipping the parts breakdown is right about $3,000 and labor is about $2500 to replace all the parts and adjust the valves. "
They said there are more ecmormical ways to get it done, but it makes more sense to do it all in one go rather than open it up to do, lets say, the exhaust hub and find the timing chain guide is chipped, etc.
I've no reason to believe the VANOS is bad or needs anything, but its also something that gives no warning before it goes. And with 164k on it, I imagine it jeeds some TLC in the near future.

I personally don't think you need a new hub if the disc is redrilled, YMMV though.
