Basically you don't want it to look like an SMG anymore. The only real indication you should have are plugs on the trans, extra connectors in the harness, and the steering wheel.
I would check for leaks, clutch feel, noise when pushing and releasing clutch pedal, listen for grinding or scraping, check the transmission fluid level, extra play in the shifter, SMG faults, and misfires when shifting.
I'm someone can add to the list but those are mostly the main things.
if you were looking at a converted SMG car, what would you look for to assess the quality of the job?

Ask the owner if the original bell housing was modified, or it was swapped with another manual bell housing. Compare the tranny input baring noise when accelerate in 4th and 5th gears. If much more noise in 4th than 5th, then the input bearing could be bad.
