Texture absolutely does. Feel - I don't know, mine is less "sticky" imo, but that's a good thing. If you are asking because you are thinking about refinishing one piece that will be adjacent to the factory finished piece - chances it won't match exactly, simply because materials are different. I would recommend doing both.

Yeah, primarily want to know if one could notice a difference between refinished cubby/ashtray as compared to the factory finish center console/cupholder piece

These would be too far apart to see the difference. It is not that drastic, if there is one at all. I was mostly talking about adjacent pieces.

I am, but its a huge piece and the cost to re-finish with shipping back and forth would be almost the same as buying brand new piece - so makes no sense for me to offer that.
