Not sure, does DME maintain mixture based on coolant temps? Need to check data on how fast the oil temps came up. I'd like to avoid the hassle of having to block the grill during cooler events.

Not sure. I'd guess that it factors into the tune at least for emissions purposes which is why the engine with throw a code for a t-stat. I have an epic tune...I'd have to guess that it would not affect anything. I'm the wrong person to give a definitive answer.

I thought it only did that on open loop start up.

Yep I'm pretty sure you're right.

A search of the code suggests that it might have some very minor effects on things like accel enrichment, but the only other side effect I can see is you'll slightly more easily trigger a "cold start" when restarting the engine when it's warm, which is neither here nor there.

Can't see anything in the mixture path that is affected by TMOT once in closed-loop operation (at that point it's all ambient pressure and intake air temp (plus exhaust temp for the CSL)).

So we are thinking keep the engine operating above 175F/80C is optimal?

I got one in the interests of head gasket longevity.

                I would say yes.
