Is my car running too cold, the needle is close to the first dot, sorry for the bad quality pic. This was highway driving. Outside temp was 61 according to the dash.

There won't be much to bleed. The coolant sensor under the intake manifold is what is reporting temp to that gauge. They can go bad and won't always throw an error code. It is much easier and not as messy to replace that sensor versus emptying most of the coolant to replace the thermostat. Once the sensor is ruled out, then time to move on to the thermostat.
